We believe the journey of a cook should include taking inspiration from international dishes and knowing how to adapt them for your own home and ingredient access.

A  bit of  history on the cultural evolution of the dish helps to deepen the cook’s understanding of the origin flavors and during the preparation of dinner class Dev will provide some background on this famous dish from the Yucatan. Cochinita Pibil is prepared with pork meat marinated in achiote and wrapped in banana leaves; traditionally it is cooked underground over hot stones. We will be using traditional ovens and focus on the fragrant spice, the quality of the pork and the steps the home cook can take to replicate the soul of pibil. This delicious dinner will be served with panuchos and fall vegetables. Our approach will be on  technique, not recipes, and we will provide guideline notes.

Safety: In compliance with state and federal directive, it is our policy to verify vaccination status for all events at Hot Stove Society. Proof of vaccination will be required for entry for everyone over 12 years of age. We require that you bring a mask to wear when you are moving about in our kitchen and may remove it when eating. Our staff is fully vaccinated and will wear masks except when presenting on the demonstration stage. Effective 10/04/2021.

Refund Policy:  Once a class is purchased it is non-refundable.  The ownership, however, is yours and you may send someone else in your stead.
