New to SLU: Mainstay Provisions

A local favorite café opens a second location.

Following years of success in Ballard, Mainstay Provisions has opened a new location at 2295 Seventh Avenue. The cafe is the brainchild of Thom Koschwanez and Ashley Thompson, two locals dedicated to serving the community. They aim to offer high-quality food and market items at reasonable prices in a space made for busy professionals and neighborhood locals alike.

Thom, with over 25 years of experience, including time at Ethan Stowell Restaurants, brings a wealth of industry knowledge to the table. “We are a modern take on an east coast bodega. Imagine your corner store staffed with talented chefs and baristas as well as a curated wine and specialty good selection,” he explains.

Thom said there’s not much of a difference between the new SLU spot and the Ballard location. Customers can find most of the same offerings as the original location with a little more focus on grab ‘n go because of the nature of the neighborhood. Expect fresh-baked pastries every morning, house made English muffins, and thoughtfully prepared food with fresh ingredients. In addition, you can enjoy fresh-tossed New York-style slices and whole pies all week, including the weekends around game times.

“I think we are trying to highlight our coffee selections and the fact that you can use our online ordering system to easily have it ready when you want. We make all our own coffee syrups in house as well as our own chai. Cafe Ladro, a local specialty bean roaster supplies us with fresh beans weekly and I think we are a strong contender to have some of the best baristas in the city.”

Mainstay Provisions is open in SLU Monday through Friday, 7am to 8pm and weekends from 8am to 6pm. You can also order catering, including quick lunches, salads, entrees, boxed lunches, and more.
