Seattle was a Mexican food desert when Angel Aguilar decided to open Flair Taco Truck 18 years ago in the heart of Fremont.
“I needed a place to eat tacos while I was drinking, and I didn’t want to have to go all the way to Federal Way or up to Northgate for something good to eat. So I decided to do my own thing,” he said.
Now a trained sommelier and the owner of the 17th permitted operating food truck in Seattle, Aguilar expanded his business into a brick-and-mortar space in South Lake Union in 2024. Flair Taco Taqueria and Margarita Bar opened at 1256 Republican St.
Aguilar, who hails from Yucatán, is focused on authenticity.
