We are lucky to live in a region of the country where fresh fish is abundant and widely available. If you wish you had a few more ideas for how to cook fish simply but deliciously so you could put it on the dinner table more frequently, this is the class for you!

Chef-Instructor Bridget Charters will teach you her favorite ways to prepare fish at home, including some classical techniques. She’ll also discuss the types of fish that you’ll find in our local markets. As Bridget demos, you’ll enjoy a substantial taste of each dish, and we’ll send you home with the recipes, so the next time you’re at the fish market, you’ll know exactly what to buy and how to cook it!

What You’ll Learn (all recipes are demo only):

  • Pacific or Dover Sole Paupiette- learn this classic technique for spreading a piece of sole with a flavorful mixture such as olive tapenade, rolling it up and oven poaching, then serve with a light herb cream sauce
  • Sear-roasted Salmon- pan sear salmon, add sautéed chickpeas and diced tomato and finish in the oven- do something a little different with always popular salmon, and learn a technique that works well for many types of fish
  • Broiled Cod- add butter, lemon, dill, and white wine,and flash under the broiler.Serve on a bed of rice with garlic butter
  • Oven poached Snapper- Lay snapper on top of sliced onions, green olives, and garlic and drizzle with olive oil and white wine, then poach in the oven for another versatile fish-cooking technique
  • Pan-fried Petrale Sole- Learn how to properly bread fish fillets with panko crumbs and how to pan fry to crispy, golden brown perfection
