Classic Cassoulet from the South of France.

Chef Bridget is going to show you how to make the rich casserole called cassoulet that originated in the south of France. Typically, cassoulet contains cooked white beans, duck confit, sausage, pancetta, and pork, layered and slow cooked together under a crisp bread crumb crust.  This is the kind of hearty food you long for on cold wintry day!

Cassoulet requires some unique ingredient shopping and some prep time.  Bridget will be offering ingredient kits which will have some of the prep time already done for you, as well as all of the shopping!  You may want to sign up for the ingredient kit with this class.

Virtual Classroom:

This class will be very similar to our previous in-person Hot Stove classes, with an instructor that demonstrates how to make each dish “live” via Zoom. As a registered attendee, you will have the ability to watch, learn and interact with the instructor, just as if you were sitting at one of our Hot Stove Society work tables! Feel free to cook along with the group or sit back and let your in-home sous chef do all the work – either way, we promise it will be a fun and educational time in the kitchen!
